Brown Sugar Citrus Tilapia

1 tablespoon finely grated fresh
Sunkist lemon zest
1 tablespoon finely grated fresh
Sunkist orange zest
1⁄₃ cup flour
½ teaspoon freshly ground
black pepper
½ teaspoon chili powder
1½ pounds tilapia fillets ( 4 fillets)
3 tablespoons butter, divided
1 garlic clove, minced
1 tablespoon fresh Sunkist lemon juice
1 tablespoon fresh Sunkist orange juice
1 Sunkist lemon, thinly sliced
1 Sunkist orange, thinly sliced
1½ tablespoons light brown sugar
4 fresh parsley sprigs, for garnish
In a shallow bowl, combine lemon zest, orange zest, flour, black pepper and
chili powder; blend well. Pat dry tilapia fillets and place in the seasoning, coating both sides well.
Melt 2 tablespoons butter in a large frying pan over medium-high heat. Place
tilapia in the pan and sauté for 5-6 minutes, turning once. Both sides should
be a nice golden brown.
Remove the fillets from the pan and add 1 tablespoon butter, garlic, lemon juice
and orange juice; cook for 30 seconds. Add lemon and orange slices, sprinkle
with brown sugar and cook over medium heat for 2-3 minutes, or until they
start to caramelize. Add tilapia to the pan and coat well with pan sauce.
To serve, place the tilapia on plates and cover with the caramelized lemon and
orange slices. Garnish with parsley and serve immediately. Makes 4 servings.
