North Coast Seafoods
2 quarts vegetable oil, for frying
1 12-ounce can or bottle of beer
1½ cups all-purpose flour, sifted,
plus more for dusting
1 teaspoon kosher salt
½ teaspoon ground black pepper
2 pounds North Coast Seafoods skinless
haddock, cut into 4-ounce pieces
French fries, coleslaw and tartar sauce,
for serving
Heat oil in a fryer or pot to 350°F.
In a bowl, combine flour, salt, pepper and beer; mix until smooth.
Dust each piece of haddock in plain flour and shake off all excess flour.
Dip in the beer batter and slowly place 3 or 4 pieces in the hot oil. Cook
until the fish is floating and golden brown, about 5-6 minutes.
Carefully remove the fish from the oil and place on paper towels to drain.
Continue with the remaining haddock.
Serve with French fries, coleslaw and tartar sauce. Makes 4 servings.
