Blackened Fresh Ahi Tuna

2 tablespoons olive oil
2 tablespoons butter
2 Western United fresh
ahi tuna steaks
(about 2 pounds)
Prepare the seasoning: In a small bowl, mix
all the ingredients. Transfer to a shaker.
Heat oil and butter in a heavy skillet over high
heat. Let the pan get very hot before cooking.
Sprinkle both sides of ahi steaks with the
seasoning, coating thoroughly. Place in the
hot pan and cook for 2-3 minutes on each
side, until the seasoning gets a charred look.
Remove from the pan and let rest for a few
minutes. Slice into ¼-inch strips.
Serve with a mixed green salad or stir-fried
vegetables. Makes 4 servings.
SEASONING
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons salt
2 teaspoons ground
black pepper
¼ teaspoon cayenne
pepper (or to taste)
½ teaspoon dried
oregano leaves
½ teaspoon dried
thyme leaves

4 8-ounce tuna steaks
1 red onion, sliced
1 beefsteak tomato,
cut into 4 slices
1 green bell pepper, seeded and cut into rings
2 teaspoons ;nely chopped
fresh oregano
Salt and pepper to taste
1 small green or red chile,
seeded and ;nely chopped
4 tablespoons white wine
or lemon juice
Preheat oven to 400°F.
Tear o; four 15-inch sheets of parchment paper.
Fold the sheets in half, crease and unfold.
For each serving, place 1 tuna steak on a parchment
sheet near the crease. Top with 2 onion slices,
1 tomato slice and 2 bell pepper rings. Sprinkle
with oregano, salt, pepper and chile. Spoon
1 tablespoon wine or lemon juice over the tuna.
Fold the parchment paper over to enclose.
Starting at the top corner, make small overlapping folds around the packet. Twist the last fold
for a tight seal. Place on a baking sheet.
Bake for about 10-12 minutes.
Place the packets on plates. Carefully cut an X
in the top of each packet to let the steam escape.
Serve immediately, in or out of the packet.
