Tikka Masala Chicken

boneless, skinless
chicken breasts
2 tablespoons butter,
divided
1 teaspoon lime juice
1 tablespoon chopped
fresh cilantro
Score chicken breasts. Combine the tikka paste
ingredients and rub on the chicken.
Combine the marinade ingredients. Soak the
chicken in the marinade, refrigerated, overnight.
Remove the chicken from the marinade and
wipe off excess. Reserve the marinade.
Preheat a skillet over medium heat. Add
1 tablespoon butter and sear chicken for
5-6 minutes on each side. Add the reserved
marinade and bring to a simmer. Cover and
simmer for 15 minutes, or until fully cooked.
Stir in the remaining butter and lime juice.
Sprinkle with cilantro.
Serve with basmati rice and roasted tomatoes
and zucchini. Makes 4 servings.
CHICKEN TIKKA PASTE
1 tablespoon lemon juice
1 tablespoon red chili paste
2 teaspoons salt
1 teaspoon sugar
¼ teaspoon ground
black pepper
YOGURT MASALA MARINADE
1 cup plain yogurt
1 teaspoon chopped
fresh ginger
1 teaspoon chopped
fresh garlic
2 teaspoons
ground coriander
1½ teaspoons
ground cardamom
1 teaspoon cayenne
1 teaspoon ground cumin
½ cinnamon stick
½ teaspoon turmeric
¼ teaspoon nutmeg
Spicy Garlic Lime Chicken

1 tablespoon olive oil
2 teaspoons garlic powder
5 tablespoons lime juice

SPICE RUB
¾ teaspoon salt
¼ teaspoon ground
black pepper
¼ teaspoon cayenne pepper
1⁄₈ teaspoon paprika
¼ teaspoon garlic powder
1⁄₈ teaspoon onion powder
¼ teaspoon dried thyme
¼ teaspoon dried parsley
Prepare the rub: In a small bowl, mix together
salt, black pepper, cayenne, paprika, garlic
powder, onion powder, thyme and parsley.
Sprinkle the rub generously on both sides of
the chicken.
Heat butter and oil in a large, heavy skillet over
medium heat. Add the chicken and sauté until
golden brown, about 6 minutes on each side.
Sprinkle with garlic powder and lime juice.
Cook for another 5 minutes, stirring frequently
to coat evenly with sauce. Makes 4 servings.
