Heat oil in a sauté pan over medium heat. Sauté mushrooms and onions until
caramelized. Add garlic and sauté another 2-3 minutes.
Grilled Strip Steaks with Blue Cheese and Mushroom Gratin

2 tablespoons extra-virgin olive oil
1 cup quartered crimini mushrooms
½ cup diced yellow onion
½ cup diced white onion
2 tablespoons minced fresh garlic
¼ cup dry red or white wine
1 tablespoon rice wine vinegar
1 tablespoon soy sauce
1 teaspoon smoked paprika
1 cup diced blue cheese
¼ cup slivered fresh basil
4 New York strip steaks ( 8-12 ounces)
Salt and pepper
¼ cup dry bread crumbs
Deglaze the pan with wine. Add vinegar, soy sauce and smoked paprika.
Reduce until the vegetables are lightly glazed. Chill the sauté. When cold,
fold in blue cheese and basil.
Season steaks to taste with salt and pepper. Grill over hot coals, keeping in
mind that they will be finished under the broiler. Preheat the oven broiler.
Spoon the gratin over the steaks and top with bread crumbs. Place under
the broiler until the gratin is golden brown, about 2 minutes. Remove from
the oven and serve immediately. Makes 4 servings.
