Mediterranean Club Sandwich
Sabra
3 slices whole-grain, sourdough
or ciabatta bread, toasted
2 tablespoons Sabra Roasted Pine
Nut Hummus
2 ounces sliced turkey breast
1¼ ounces (about 2 tablespoons)
roasted red pepper
1 ounce thinly sliced prosciutto
or cooked bacon
SALAD
½ cup baby arugula
5 fresh basil leaves, chopped
½ teaspoon lemon juice
1 teaspoon olive oil
1⁄₈ teaspoon ground sumac (optional)
Salt to taste
2-3 teaspoons chopped
Kalamata olives
Prepare the salad: Combine all ingredients and toss to coat. Set aside.
To assemble the sandwich, lay bread slices side by side. Spread hummus on
each slice. Top one slice with turkey and roasted red pepper. Top the second
with prosciutto (or bacon), salad and olives. Combine the three layers to
create a club sandwich.
Insert a frill pick or toothpick in each quarter. Slice the sandwich into quarters,
creating 4 triangles. Makes 1 serving.
