Roasted Turkey Salad
Sandwiches wıth Chipotle Mayo
and Avocado on Whole Grain
La Brea Bakery
3 cups shredded roasted
turkey (without skin)
8 slices La Brea Bakery
Whole Grain Bread
2 cups watercress,
arugula or baby greens
1 ripe avocado,
peeled and sliced
Sea salt
CHIPOTLE MAYONNAISE
1 cup mayonnaise
¼ cup chopped fresh cilantro
2 tablespoons olive oil
2 tablespoons fresh lemon
juice, or to taste
4 large garlic cloves,
grated or minced
1½ teaspoons pureed or
;nely chopped chipotle
peppers in adobo sauce
1 teaspoon kosher salt,
or to taste
Prepare the chipotle mayonnaise: Combine all
ingredients and mix thoroughly with a whisk.
Add more salt and lemon juice to taste.
Place the shredded turkey in a bowl and toss with
¾ cup of the chipotle mayonnaise (use more or
less depending on individual preference).
For each sandwich, place some turkey salad on a
slice of bread. Place greens on the salad and top
with slices of avocado. Add salt to taste and close
the sandwich. Makes 4 servings.
Bacon Cheeseburger Pizza
Kirkland Signature
12 ounces ground beef,
cooked and seasoned
to taste
1 Kirkland Signature
frozen cheese pizza
5 slices bacon, cooked,
cut in half
4 tablespoons ketchup
3 tablespoons
yellow mustard
2 ounces iceberg lettuce,
shredded
1 large vine-ripened
tomato, thinly sliced
½ small yellow onion, diced
;⁄; cup chopped dill pickles
Spread ground beef evenly over the pizza.
Arrange bacon pieces on the pizza.
Bake the pizza according to package directions.
When the pizza is cooked, remove from the oven.
Squirt ketchup and mustard evenly over the pizza.
Evenly distribute the shredded lettuce over
the pizza. Add tomatoes, onions and pickles.
Makes 8 servings.
