Albacore Waldorf Wraps
Kirkland Signature
1 7-ounce can Kirkland
Signature solid white
albacore tuna, drained
and flaked
¼ cup plain Greek-style
yogurt
1 teaspoon honey
¼ teaspoon curry powder
¼ cup walnuts, chopped
¼ cup diced celery
2 12-inch spinach-flavored
tortilla wraps
2 cups fresh spinach
leaves, washed and
drained
1 Gala apple, cored and
sliced (about 8 wedges)
In a small bowl, gently combine tuna, yogurt,
honey, curry powder, walnuts and celery.
Set aside.
On each tortilla, layer spinach leaves, apple
wedges and tuna mixture. Roll tightly burrito-style and cut in half diagonally. Makes 2 servings.
Turkey and Dried Plum
Pita Pockets
Kirkland Signature/Sunsweet
2 cups (about 12 ounces)
diced cooked turkey
or chicken
¾ cup (about 5 ounces)
Kirkland Signature/
Sunsweet dried plums,
chopped
½ cup sliced celery
½ cup plain nonfat yogurt
¼ cup sliced green onions
1 tablespoon sweet
or hot mustard
Salt and pepper
6 lettuce leaves
3 whole-wheat pita
breads, halved
In a medium bowl, combine turkey, dried plums,
celery, yogurt, green onions and mustard. Blend
until thoroughly mixed. Season to taste with salt
and pepper. Store, covered, in the refrigerator for
up to 3 days.
To serve, place 1 lettuce leaf in each pita pocket.
Spoon ½ cup of the turkey mixture into each pita
pocket. Makes 3-6 servings.
