Chocolate Chip Raisin Croissant Puddings
Vie de France
1¼ cups milk
;⁄; cup granulated sugar
½ teaspoon vanilla extract
1 large egg, beaten
3 Vie de France butter
croissants, cubed
2 tablespoons semisweet
chocolate chips
2 tablespoons raisins
VANILLA SAUCE
1 large egg, beaten
1 tablespoon light brown sugar
¼ cup granulated sugar
1 teaspoon melted butter
1 teaspoon cornstarch
1 teaspoon vanilla extract
½ cup heavy cream
Pinch of ground cinnamon,
cloves and nutmeg
amounts of the croissant mixture in the mu;n cups, then press gently. Pour
batter into each cup; then let the batter soak into the puddings for 20 minutes.
Preheat oven to 325°F.
Set the mu;n pan in a slightly larger pan and add enough hot water to reach
halfway up the sides of the mu;n pan. Bake for 13-14 minutes, or until golden
brown and no liquid appears when the tops are pressed.
Prepare the sauce: Combine all ingredients in the top of a double boiler. Cook
over simmering water, stirring constantly, until it thickens.
Remove the puddings from the pan and serve with warm vanilla sauce. Makes
12 servings.
Grease a 12-cup mu;n pan.
In a saucepan, heat milk, sugar and vanilla over low heat until bubbles appear,
4-5 minutes. Remove from the heat and stir in beaten egg until well blended.
Set the batter aside.
