Fruit ’n’ Pudding Parfaits
Sunkist Growers
1 package ( 4 servings)
vanilla or chocolate
instant pudding and
pie filling (see note)
2 cups low-fat milk
Grated zest from
1 Sunkist orange
2 Sunkist oranges,
peeled and cut into
bite-size pieces
1 cup Sunkist green seedless
grapes, cut in half
2 tablespoons chopped nuts
Prepare pudding with cold milk according to
package directions. Stir in orange zest. Let
stand for 5 minutes to thicken.
For each serving, spoon ¼ cup pudding into a
parfait glass. Add ¼ of the orange pieces and
grape halves. Top with ¼ cup more pudding.
Sprinkle with chopped nuts. Makes 4 servings.
Note: One package of regular cooked pudding,
prepared with milk and grated orange zest, can
be substituted. It must be chilled thoroughly
before assembling the parfaits.

Kiwi Jewel Parfaits

4 South African navel
oranges, peeled
Cut 3 oranges into ½-inch pieces. Cut 1 orange
into slices.
2 cups Chilean or
Californian grapes,
halved or quartered
In a bowl, combine the diced oranges with the
grapes and kiwis. Reserve the orange slices.
6 Grecian kiwifruit,
peeled and cut into
½-inch pieces
24 ounces Greek yogurt
(honey or honey-vanilla
flavor)
In parfait glasses, begin with a layer of mixed
fruit, then yogurt and then granola. Repeat
the layering, reserving some of the fruit “jewels”
to garnish the top. Finish with a dollop of yogurt,
sprinkle with fruit and garnish with orange
slices or half slices. Makes 6-8 servings.
