New York Style Sausage
1 pound New York Style Italian
sausage links, casings removed
1 pound cooked, peeled
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh marjoram
½ teaspoon salt
¼ cup extra-virgin olive oil
1 teaspoon freshly ground pepper
12 small pearl onions, peeled
¼ cup freshly grated Parmesan
or Romano cheese
1 cup dry white wine
In a bowl, combine sausage, chestnuts, salt, pepper, grated cheese, parsley and
marjoram; blend well. Shape into meatballs the size of walnuts and roll in the
seasoned flour. In a skillet, heat a thin layer of oil over medium-high heat.
Add the meatballs and onions to the skillet and fry until the meatballs are
just cooked through, about 10-15 minutes. Drain off excess oil.
Add wine and let it simmer down into a sauce. Cover and cook over low heat
for about 5 minutes. Makes 8 servings.
