Tequila Guacamole
Avocados from Mexico
¼ cup pickled jalapeños,
Dried oregano to taste
;nely chopped
¼ cup tequila of your choice
¼ cup vinegar from the
pickled jalapeños
½ cup pickled carrots, ;nely chopped
4 fully ripened avocados from
Mexico, halved, pitted and peeled
;⁄; cup ;nely chopped white onion
Salt
Juice of ½ lime ( 1 tablespoon)
Chips, for serving
In a bowl, combine jalapeños, jalapeño vinegar, carrots, onion,
lime juice, oregano and tequila. Let marinate for 2 minutes.
Coarsely mash avocados with a fork. Add to the jalapeño mixture.
Stir in oil and salt to taste.
