Broccoli Cheese Soup
Eat Smart
4 tablespoons butter
1 small yellow onion, diced
In a large stockpot, melt butter over medium
heat. Add onion and garlic; sauté until softened.

broccoli ;orets, chopped
into very small pieces
Stir in broccoli and chicken broth. Add garlic
powder, salt and pepper. Simmer until the
broccoli is tender, about 10-15 minutes.
4 14.5-ounce cans low-sodium chicken broth
Reduce the heat and add cheese cubes, stirring
until melted.

Mix in half-and-half.

½ teaspoon ground pepper
1 1-pound processed
cheese loaf, cut into
small cubes
2 cups half-and-half
In a small bowl, stir cornstarch into the water
until dissolved. Stir into the soup and cook,
stirring continuously to prevent sticking, until
it thickens. Makes 12 servings.
Tip: To reduce the calories, substitute milk for
the half-and-half and use reduced-fat cheese.

Variation: Add 2 baked potatoes, cut into bite-
size cubes, when you add the cheese and garnish
with cooked diced bacon. For extra spice, add
your favorite hot sauce.
Asparagus and Brie Soup

½ pound asparagus
1 tablespoon salt

¼ cup ;our
3 cups chicken broth
½ cup sweet white wine
1 cup heavy cream
½ cup Brie, rind removed
and cut into chunks
Snap or cut o; the white portion at the bottom
of each asparagus spear and discard. Cut the
asparagus into 2-inch pieces.
Fill a large pot half full of water, add salt and bring
to a boil. Add the asparagus to the boiling water
and cook for 3 minutes. Drain and immediately
plunge into a bowl of ice water. Drain.
In a saucepan, heat butter over medium-high heat.
Add the asparagus and sauté until tender. Stir in
;our, reduce the heat and cook for 2 minutes.
Stir in broth, wine and cream. Bring to a boil, then
reduce the heat and simmer for 10 minutes.
Transfer the soup to a blender or processor and
puree. Return to the pot and reheat to a simmer. Stir
in cheese and continue to simmer for 5 minutes,
or until the cheese has melted. Makes 4 servings.
