Place asparagus on a baking sheet and drizzle with oil. Toss to coat. Season to taste
with salt and pepper. Arrange the asparagus in a single layer on the baking sheet.
Roasted Asparagus with Pistachios

2 pounds asparagus, trimmed
2 tablespoons olive oil
Salt and pepper
½ cup pistachios, shelled and chopped
½ cup grated Parmesan cheese
Roast on the center oven rack for 10 minutes. Remove the asparagus from the
oven and sprinkle with pistachios and Parmesan. Return to the oven for 5 minutes.
