Cut tomatoes in half and lightly squeeze the juice into a bowl. Chop the tomatoes
and add to the bowl. Add basil, oil, garlic, salt, red pepper flakes and black pepper.
Bow-Tie Pasta with Fresh Tomatoes

2 pounds SunSet Campari
cocktail tomatoes
½ cup chopped fresh basil
¼ cup extra-virgin olive oil
2-3 garlic cloves, minced
1 teaspoon salt
¼-½ teaspoon crushed red pepper flakes
½ teaspoon freshly ground black pepper
1 pound dry bow-tie pasta
1 cup freshly grated Parmesan cheese
Mix, cover and let sit at room temperature for 15 minutes for the flavors to marry.
Meanwhile, cook pasta according to package directions. Drain well.
Toss the hot pasta with the tomato sauce and Parmesan. Adjust the seasoning
to taste. Serve immediately. Makes 6 servings.
