Cut potatoes into bite-size chunks and cook in the microwave for about 10 minutes,
or until tender. Place the potatoes in a large bowl. Add oil and stir to coat. Mix
the spices together. Add to the potatoes and blend well.
Grilled Southwestern Potatoes

3-4 pounds fingerling potatoes
or B-size red potatoes
¼ cup olive oil
3 tablespoons ground cumin
2 tablespoons chili powder
2 tablespoons garlic powder
1 teaspoon cayenne pepper (optional)
Place the potatoes in a grilling basket coated with cooking spray. Use a
shallow baking sheet if you don’t have a grilling basket.
Place on the grill and cook at 250-300°F for about 30 minutes, stirring frequently,
until most of the potatoes are browned and crispy. Add salt if desired.
Makes 6-8 servings.
