Chop the fruit that was removed from the apples, to yield approximately 1 cup.
Ham-Stuffed Apples

6 large Borton & Sons red apples, unpeeled
8 ounces cooked ham, cut into small cubes
2 tablespoons butter, softened
1⁄₃ cup pecans, chopped
3 tablespoons light brown sugar
½- 1 cup apple juice
1⁄₃ cup raisins (brown or golden)
Preheat oven to 350°F.
Cut the tops off the apples and scoop out the core plus some of the fruit, but be
sure to leave a thick shell to hold the stuffing.
In a mixing bowl, combine the chopped apple with ham, butter, raisins,
pecans and brown sugar, stirring to combine well. Spoon the mixture into
the cored apples and place them in a baking dish.
Pour juice over the apples and bake for 35-40 minutes, or until the apples
are tender, basting occasionally with the juice. Makes 6 servings.
