Ocean Spray Cranberry Mousse
Tyson Caramel Apple Pork Chops
4 boneless pork chops, 1/8 teaspoon mace
3/4-inch thick 1/8 teaspoon nutmeg
Vegetable oil
2 tablespoons butter
1 cup Ocean Spray* 1 16-ounce can Ocean Spray*
Cranberry Juice Cocktail Jellied Cranberry Sauce
1 3-ounce package raspberry- 2 cups frozen nondairy
flavored gelatin whipped topping, thawed
1. Heat cranberry juice cocktail to boiling in a saucepan.
2 tablespoons brown sugar
2 tart red apples, cored and
1/4 teaspoon salt sliced into 1/2-inch wedges
1/4 teaspoon pepper 3 tablespoons chopped pecans
Remove from heat and stir in gelatin until dissolved. Transfer to a
large mixing bowl.
1. Brush chops lightly with oil and cook in a large skillet over
medium-high heat for 5 to 6 minutes, turning occasionally, until
evenly browned on both sides. Remove chops to a serving
platter; keep warm.
2. In a small bowl, combine brown sugar, salt, pepper, mace and
nutmeg. Melt butter in the skillet over low heat; stir in brown
sugar mixture and apples. Cover and cook for 3 to 4 minutes, or
until tender. Remove apples and arrange on top of pork chops.
22. Place cranberry sauce in a small bowl and beat with an
electric mixer on high speed for 1 minute. Stir into gelatin mixture. Chill until mixture begins to thicken but is not set.
3. Gently mix in whipped topping with a rubber spatula.
Spoon into serving dishes or a baked pie shell. Chill until firm.
Makes 8 servings.
*Brands may vary by region; substitute a similar product.
3. Continue cooking the sauce remaining in the skillet, uncovered, until it thickens slightly. Spoon over the apples and chops.
Sprinkle with pecans. Makes 4 servings.

Fresh Network Crispy Herbed Potatoes
22 large russet potatoes, 1/2 cup grated Gruyére cheese
about 14 ounces each, or crumbled Stilton
peeled and sliced thin
2 tablespoons chopped
6 tablespoons olive oil fresh basil
2 red onions, sliced thin
1. Soak potato slices in a large bowl of cold water for 10
minutes; drain and dry on paper or kitchen towel.
2. Heat oil in a large frying pan over medium heat. Add
onions and cook for 2 minutes, stirring frequently. Add potatoes
and cook for 10 to 15 minutes, turning frequently, until potatoes
are tender and golden.

3. Sprinkle potatoes with cheese and cook for 2 minutes
without stirring, until the cheese melts. Sprinkle basil on top.
Makes 4 to 6 servings.
