BC Hot House Marinated
Campari Tomato Salad
11/4 cups white wine vinegar 1 bag Campari tomatoes on
1/4 cup balsamic vinegar the vine ( 2 pounds), quartered
1/2 teaspoon salt vertically*
1/4 cup finely chopped shallots 2 yellow tomatoes (if available), cut
2 tablespoons finely chopped horizontally into 1/2-inch slices
chives 4 sweet bell peppers (assorted
2 tablespoons fresh lemon juice colors will provide a great
1/4 teaspoon white pepper presentation!), cored, seeded
21/2 tablespoons extra virgin and cut in 1/2-inch slices*
olive oil 1 long English cucumber, cut in
1/2-inch slices*
11. To prepare the marinade, combine vinegars and salt in a large bowl;
stir until salt is completely dissolved. Add shallots, chives, lemon juice
and white pepper; mix well. Slowly whisk in oil until well blended.
2. Add tomatoes and peppers to marinade; toss well. Cover and let stand
at room temperature 2 to 3 hours.
3. Add cucumber and mix.
4. To serve, remove any remaining marinade (you can save it for later if
you like) and place salad in a large bowl or serving plate. Makes 8 servings.
*Brands may vary by region; substitute a similar product.
