Mediterranean Spinach
and Orzo Salad

1 cup orzo pasta RED WINE VINAIGRETTE
4 ounces Earthbound 1/2 teaspoon chopped garlic
Farm* Organic Baby 1 teaspoon chopped shallot
Spinach Organic 1/4 teaspoon dried oregano
1/3 cup oil-packed sun-dried 1/4 teaspoon dried thyme
tomatoes, chopped 1/2 teaspoon sugar
1/2 cucumber, peeled, seeded and diced 1/4 cup red wine vinegar
1/ 1 2 4 cup kalamata olives, / cup extra-virgin olive oil
pitted and chopped 1/4 cup canola oil
2 teaspoons chopped
fresh oregano or 3/4
teaspoon dried
Salt and freshly ground pepper
3 ounces feta cheese
1. To prepare the vinaigrette, combine all ingredients in a jar and shake
to mix.
2. Cook orzo according to package directions.
3. While the pasta is cooking, combine spinach with sun-dried tomatoes,
cucumber, olives and oregano in a large bowl.
4. When the pasta is cooked, drain under cold running water until
room temperature.
5. Toss pasta with mixed vinaigrette to taste and the other ingredients in
the salad bowl. Season with salt and pepper, if needed.
6. Serve at room temperature, topped with crumbled feta cheese.
Makes 4-6 servings.

Spring Mix Salad with
Warm Almond-Crusted Goat Cheese
and Balsamic Vinaigrette

4 ounces fresh goat cheese log, BALSAMIC VINAIGRETTE
Montrachet-style 1 teaspoon chopped shallot
2 tablespoons finely chopped 1 teaspoon dried thyme
toasted unsalted almonds 1/2 teaspoon sugar
5 ounces Earthbound Farm 1/4 cup balsamic vinegar
Spring Mix Organic 1 tablespoon fresh lemon juice
4 ounces Earthbound Farm apple slices Organic 1/2 cup extra-virgin olive oil
Salt and freshly ground pepper 1/4 cup canola oil
3 ounces Earthbound Farm*
organic raisins Organic
Sliced and toasted baguette
1. To prepare the vinaigrette, combine all ingredients in a jar and shake to mix.
2. Preheat broiler.
3. Cut goat cheese into 4 rounds, approximately 1/2 inch thick and 2-3 inches
in diameter.
4. Press chopped almonds into the top and bottom of each cheese round.
5. Place the cheese rounds on a baking sheet lined with aluminum foil or parchment paper. Broil for 1-3 minutes, or until they begin to brown, watching closely
so they don’t burn.
6. While the cheese is heating, place greens and apples in a bowl and toss with 1/4
cup mixed dressing and salt and pepper to taste. Place on 4 plates.
7. When the cheese is warm and the nuts are just beginning to brown, remove
from the oven. Using a spatula, place a cheese round on the middle of each salad.
8. Sprinkle with raisins. Serve with toasted baguette slices. Makes 4 servings.
