Salsational Blue Corn Chips
and Chicken Salad

4 boneless, skinless chicken breast halves
1 packet taco seasoning
1 tablespoon olive oil
1 15 1/4-ounce can whole-kernel sweet corn, drained
1 15-ounce can cooked black beans, drained and rinsed
3 cups cooked white rice
1 head iceberg lettuce, chopped
2 cups Garden Fresh Gourmet* Kettle Style Blue Corn Tortilla Chips
1 cup shredded mild Cheddar cheese
2 cups Garden Fresh Gourmet* Jack’s Special Salsa
1 cup light ranch dressing
1. Season chicken with taco seasoning. Heat olive oil over medium heat in a
sauté pan. Add chicken and cook until done. Cut into strips and set aside.
2. In a bowl, mix corn, black beans and rice. Form into 4 balls and set aside.
3. Spread the chopped lettuce over the entire surface of a large serving platter.
Hollow out the center and place the balls of beans, corn and rice there.
4. Arrange the chicken strips on the lettuce around the rice. Place tortilla
chips around the outside of the plate. Sprinkle cheese over all.
5. Combine salsa and ranch dressing in a bowl and stir to mix. Serve on the
side or drizzle over the dish. Makes 10 servings.

Pam Original No-Stick Cooking Spray
1/2 cup Gulden’s* Spicy Brown Mustard
1/2 cup Knott’s Berry Farm* strawberry preserves
1 1/2 pounds boneless, skinless chicken breasts
1 cup crushed reduced-fat cheese-flavor crackers
1. Preheat oven to 400°F. Coat a baking sheet with cooking spray; set aside.
2. Combine mustard and preserves in a small serving bowl; set aside.
3. Cut chicken into 1-inch chunks. Spray evenly with cooking spray, then
coat with cracker crumbs. Place in a single layer on the prepared baking
sheet; spray evenly with cooking spray.
4. Bake for 15-20 minutes, or until the chicken is no longer pink inside and
juices run clear, turning over after 10 minutes.
5. Serve as dippers with the mustard sauce. Makes 6-8 servings.
Tip: For a kid-friendly variation, substitute Gulden’s Honey Mustard for the
spicy mustard.
