Mediterranean Cod with
Tossed Penne Pasta
4 portions Trident Seafoods*
Mediterranean Cod frozen fillets
4 ripe tomatoes, seeded and diced
3/4 cup kalamata olives
3/4 cup sun-dried tomatoes,
3 tablespoons chopped fresh basil
2 tablespoons freshly chopped garlic
2 tablespoons balsamic vinegar
4 tablespoons extra-virgin olive oil
12 ounces penne pasta
Salt and ground pepper
3/4 cup fresh feta cheese crumbles
Preheat oven to 425°F.
Place frozen fish portions in a baking dish, tent loosely with foil and bake for 18-25
minutes, or until the fish flakes easily with the pressure of a fork.
In a large bowl, combine tomatoes, olives, sun-dried tomatoes, basil, garlic, vinegar
and olive oil.
Cook penne in boiling salted water until al dente, about 10-12 minutes. Drain. Add to
the tomato mixture and toss. Season to taste with salt and pepper.
Spoon blended pasta into large individual serving bowls, add the cod and top with
feta. Makes 4 servings.
