Chicken Salad Dijon with
Grapes and Apples
1 pound boneless, skinless chicken breasts,
visible fat removed
3 teaspoons extra virgin olive oil, divided
Salt and pepper
3 tablespoons nonfat plain yogurt
3 tablespoons Dijon mustard
1/3 cup chopped celery
1/3 cup black seedless grapes,
cut in half
1/3 cup chopped red apple
Lettuce leaves, for garnish (optional)
1. Preheat a grill to high heat.
2. Rub chicken on all sides with 1 teaspoon olive oil.
Season to taste with salt and pepper. Grill on high
heat for 3 to 5 minutes per side, or until the chicken
is no longer pink inside. Let the chicken cool, then
cut into bite-size cubes.
3. Meanwhile, in a large glass or plastic mixing
bowl, whisk together the remaining 2 teaspoons
olive oil, yogurt and mustard. Add chicken, celery,
grapes and apple. Gently toss the mixture well
to combine. Season to taste with salt and pepper.
Garnish with lettuce leaves, if desired.
Makes 4 servings.
