Pummelo Mojo over Grilled Halibut

2 8-ounce halibut steaks
3 tablespoons vegetable oil
Grated zest and juice of 2 fresh
Sunkist* pummelos (see note)
1 small red onion, thinly sliced
1 garlic clove, minced
2 tablespoons white balsamic vinegar
Sea salt and freshly ground pepper
Grated zest and juice of 2 fresh

Place halibut in a large nonreactive bowl or pan. Combine oil, zests, juices, onion,
garlic and vinegar; pour over the ;sh. Marinate in the refrigerator for 20-30 minutes.
Preheat the grill to medium-high. Remove the ;sh from the marinade and place on
the grill. Pour the marinade into a saucepan. Grill the ;sh for about 7 minutes
per side, or until it ;akes easily. Transfer to a serving platter.
