Pork Chops with Apples and Bacon

Season pork chops on both sides with ginger and sage to taste. Place in the skillet
Rubbed dried sage
½ cup walnut pieces
8 slices Kirkland Signature* bacon,
cut into ½-inch pieces
1 large Granny Smith apple, cored
and cut into 1½-inch pieces
1 cup chopped sweet yellow onion
½ cup dried cranberries
¼ teaspoon apple pie spice
¾ cup apple cider
Ground ginger
¼ cup maple syrup
In a large skillet, toast walnuts over medium-high heat, stirring often. Remove
from the skillet and set aside.
Add bacon to the skillet and cook for about 5 minutes. Add onions and continue
cooking until the bacon is done and the onions are browned and tender. Remove
from the skillet, reserving the grease.
and cook in the bacon grease over medium-high heat until browned, about
2 minutes per side. Remove the chops and carefully drain the grease from the
skillet. Return the chops to the skillet. Add apple, dried cranberries, bacon
and onions. Sprinkle with apple pie spice. Pour cider and maple syrup over all.
Cover and simmer over medium-low heat for 5 minutes. Turn the chops and
cook for 5 minutes, or until the internal temperature is 155°F.
Serve the chops topped with the apple-bacon mixture. Garnish with toasted
walnuts. Makes 4 servings.
