Sausage and Chicken Cacciatore
New York Style Sausage
¼ cup olive oil
4 links New York Style*
Italian sausage,
cut in half crosswise
8-10 ounces boneless
chicken breast, cut in
bite-size pieces
8-10 ounces boneless
chicken thigh meat,
cut in bite-size pieces
4 teaspoons thinly
sliced garlic
½ cup onions cut in
1-inch squares
1 cup halved mushrooms
1 cup green bell peppers
cut in 1-inch squares
1 cup zucchini cut in
¼-inch slices
Pinch of salt
Pinch of ground pepper
¼ cup dry white wine
½ cup chicken stock
4 cups marinara sauce
1 pound spaghetti
(or any other pasta)
Heat oil in a large nonstick skillet over medium
heat. Add sausage and cook until lightly browned
all over, 2-3 minutes.
Add all chicken and sauté for 2-3 minutes.
Add garlic, onions, mushrooms and bell peppers.
Turn up the heat slightly and sauté for 3-4 minutes.
Add zucchini, salt and pepper.
Turn the heat to high, add wine, and light with a
match to burn o; the alcohol.
Add chicken stock and cook until slightly reduced,
about 2 minutes.
Add marinara sauce, reduce the heat, and simmer
for about 5 minutes.
Meanwhile, cook spaghetti according to package
directions.
Place the spaghetti in a large serving bowl and top
with the sauce. Makes 4-6 servings.

8 ounces spaghetti
¼ cup olive oil
2 garlic cloves,
;nely chopped
1 pint cherry tomatoes,
quartered
½ cup pitted Kalamata
olives, coarsely chopped
2 tablespoons capers
2 teaspoons McCormick

(or to taste)
2 tablespoons chopped
fresh parsley
½ cup grated
Parmesan cheese
Cook pasta according to package directions.
Drain well.
Heat oil in a large skillet over medium-low heat.
Add garlic; cook and stir for 1 minute, or just until
fragrant. Add tomatoes, olives, capers, Italian
seasoning and red pepper; cook and stir for
3 minutes, or until the tomatoes begin to soften.
Place the pasta in a large serving bowl. Add the
tomato mixture and parsley; toss well. Sprinkle
with Parmesan. Makes 4 servings.
