Italian-Style Sirloin Sandwiches

;⁄; cup Italian seasoning
2 tablespoons crushed
3 tablespoons onion powder
3 tablespoons garlic powder
1 tablespoon ground
3 tablespoons kosher salt
1 13-pound whole
prime top sirloin steak
¼ cup olive oil
1 quart beef stock
2 cups dry red wine
16 12-inch hoagie rolls,
split in half
1 16-ounce jar giardiniera
To prepare the rub, in a small bowl, combine Italian
seasoning, red pepper, onion powder, garlic powder,
black pepper and salt. Rub the spices into the sirloin.
Refrigerate, uncovered, overnight.
Preheat oven to 450°F.
Rub the sirloin with oil. Place on a rack in a roasting
pan. Set in the oven and roast until deep brown,
about 25-30 minutes. Reduce the oven temperature

beef with foil and cook for 2½- 3 hours, or until the
internal temperature is 135°F.
Remove from the oven, remove the foil, and let
the meat rest for 30-45 minutes. Reserve the liquid
from the pan and refrigerate until needed.

In a medium bowl, combine beef, pepper and ¼ cup
Original Gourmet Sauce. Shape into 4 patties.
Grill the burgers and pineapple rings, basting with the
remaining ¼ cup sauce during the last 1-2 minutes
Place cheese on burgers, top each with a slice of
pineapple, and transfer to the buns. Makes 4 servings.
