Toffee Cream Cheese Bars
2 cups graham cracker crumbs
4 tablespoons unsalted butter, melted
1½ pounds Raskas* cream cheese, softened
¾ cup sour cream
11 ounces Heath Bits’O Brickle to;ee bits
½ cup sugar
1 14-ounce can sweetened
1 teaspoon vanilla extract
5 large eggs
Preheat oven to 300°F. In a medium bowl, combine graham cracker crumbs with
melted butter. Transfer to a 13-by-9-inch pan and pat evenly onto the bottom.
Combine to;ee bits and sweetened condensed milk in the top of a double boiler
and heat over simmering water until melted. Remove from the heat and let cool
for about 5 minutes.
In a stand mixer, combine cream cheese, sour cream, sugar and vanilla. Beat
until well blended and smooth. Add the to;ee/condensed milk mixture and
beat until blended. Add eggs one at a time, beating until fully incorporated.
Pour the mixture over the crust.
Set the pan in a larger pan and add enough hot water to reach halfway up the
sides. Bake for 1 hour, or until fully set to the touch. Let cool completely before
slicing into bars. Makes 8-10 servings.
