Dark Chocolate Super Fruit
Crispy Squares
Brookside
3 tablespoons butter
or margarine
1 10-ounce package
regular marshmallows
(about 40), or 4 cups
miniature marshmallows
6 cups crispy rice cereal
1 cup Brookside* Dark
In a large saucepan, melt butter over low heat.
Add marshmallows and stir until melted. Remove
from the heat.
To do this in the microwave, combine butter and
marshmallows in a microwave-safe bowl and heat
on high for 3 minutes, stirring after 2 minutes. Stir
until smooth.
Chocolate Açai with
Blueberry (or Dark
Chocolate Pomegranate)
Add cereal and Dark Chocolate Açai to the melted
marshmallows. Stir until well coated.
Using a buttered spatula, press the mixture evenly
into a greased 13-by-9-by-2-inch pan.
Let cool. Cut into squares. Makes 12 servings.
Tips: Diet, reduced-calorie or tub margarine is not
recommended. Store for no more than 2 days at
room temperature in an airtight container. To freeze,
place in layers separated by waxed paper in an
airtight container; let stand at room temperature
for 15 minutes before serving.

Date Oatmeal Chocolate
Chunk Cookies
SunDate
2 cubes (½ pound) butter,
at room temperature
1½ cups ;rmly packed
light brown sugar
2 large eggs, beaten
1 tablespoon
vanilla extract
1½ cups ;our
½ teaspoon salt
1 teaspoon baking soda
1½ teaspoons
ground cinnamon
1½ cups chopped SunDate*
Medjool dates
1 12-ounce package semi-
sweet chocolate chunks
3 cups rolled oats
Preheat oven to 350°F. Line 2 baking sheets with
parchment paper to prevent overbrowning the
cookie bottoms.
In a large bowl, cream together butter and sugar
until smooth and ;u;y. Add eggs and vanilla,
mixing until well incorporated.
In a separate bowl, mix ;our, salt, baking soda
and cinnamon. Add to the butter mixture and stir
until blended.
Stir in dates and chocolate chunks. Stir in oats.
Spoon the dough by ¼-cup scoops or large spoonfuls
onto the baking sheets, leaving at least 2 inches
between cookies.
Bake until the edges are golden brown, about
14 minutes. Let cool for 5 minutes on the baking
sheets, then move the cookies to a wire rack.
Makes about 2 dozen large cookies.
