Sweet and Spicy Coleslaw
6 cups shredded green cabbage
2 cups shredded red or purple cabbage
2 cups shredded carrots
½ cup thinly sliced green onions
3 fresh California white-;esh nectarines,
diced into ¼-inch cubes
1 cup mayonnaise
2 tablespoons vinegar
1 tablespoon white sugar
1 teaspoon dried celery seeds
½ teaspoon salt
½ teaspoon pepper
3 jalapeños, diced, with seeds removed
In a large bowl, combine cabbages, carrots, green onions, nectarines and jalapeños.
In a small bowl, stir together mayonnaise, vinegar, sugar, celery seeds, salt and
pepper. Pour over the cabbage mixture. Toss lightly to coat. Cover and chill for
2-4 hours. Makes 10-12 servings.
