Green and White Asparagus Salad

1 bunch ( 2¼ pounds)
green asparagus,
trimmed
In a pot of boiling salted water, blanch asparagus
for 5-8 minutes, until just tender. Transfer to a
cold-water bath.
1 bunch ( 1¾ pounds)
white asparagus,
trimmed and peeled
6 tablespoons
champagne vinegar
In a small bowl, mix vinegar, mustard and honey.
Slowly add oil and mix until blended. Depending
on your preference, you can add more vinegar.
Season to taste with salt and pepper.
2 tablespoons whole-grain mustard
2 tablespoons honey
To serve, arrange asparagus on each plate, add
some frisée and shaved Parmesan, and drizzle
with vinaigrette. Makes 12 servings.

ground pepper
Tips: The asparagus can also be grilled over medium
heat for 2 minutes on each side, or until just tender.
If white asparagus is not available, use all green.

Dijon-Balsamic Asparagus Salad

1 pound fresh Altar
Produce* green
asparagus, cut diagonally
into ¾-inch pieces
8 celery stalks,
cut diagonally into
¼-inch pieces
2 carrots, shredded
¼ cup ;nely chopped
fresh Italian parsley
¼ cup ;nely chopped
fresh cilantro
Heat a small amount of oil in a sauté pan over
medium-high heat. Add asparagus and pan-grill
until tender and slightly browned.
In a large bowl, combine asparagus, celery, carrots,
parsley, cilantro and jalapeño.
In a small bowl, combine all dressing ingredients,
stirring to blend. Pour the dressing over the salad
and toss lightly until evenly coated.
Refrigerate for 30 minutes before serving, or serve
at room temperature. Makes 6-8 servings.
