3 Windset Farms® Dolce® Super Sweet
Baby Bell Peppers, seeded and chopped
1 Windset Farms® Fresco® Long English
Cucumber, seeded and chopped
20 Windset Farms® Concerto® Tomatoes, halved
12 Kalamata olives, chopped
DRESSING
2 small shallots, peeled and ;nely minced
2 cloves garlic, peeled and ;nely minced
¼ cup lemon juice
¼ cup red wine vinegar
2 teaspoons Dijon mustard
2 teaspoons honey
2 tablespoons fresh dill, ;nely chopped
2 teaspoons fresh oregano, ;nely chopped
1 teaspoon kosher salt
½ cup extra-virgin olive oil
¼ cup mayonnaise
¼ cup sour cream
Place salad ingredients in a medium bowl
and set aside. In a separate medium bowl,
whisk together shallots, garlic, lemon
juice, vinegar, mustard, honey, dill,
oregano and salt. Slowly whisk in
olive oil. Whisk in mayonnaise
and sour cream, blending well.
Add desired amount of dressing
to salad and gently stir until
blended. Serves 4.
