Special
COGNAC IS CONSIDERED one of the
finest spirits originating from grapes. Its
fancy reputation is due to the strict regulations that must be followed to bear its name,
a practice called controlled designation of
origin. Like Champagne, which must be
made from grapes grown in a particular
region, this double-distilled French liquor
can be called cognac only if the ugni blanc
grapes from which it’s made hail from six
specific French growing regions: Grande
Champagne, Petite Champagne, Borderies,
Fins Bois, Bon Bois and Bois Ordinaire.
Sixty-five percent of Costco’s Kirkland
Signature™ Cognac XO comes from grapes
grown in the Grande Champagne and Petit
Champagne regions, with the remainder
from Borderies, Fin Bois and Bon Bois. “We
did this by design,” says Costco liquor buyer
Romar Nichols. “We found that by using
grapes from different regions, it gave the
liquor more natural complexity.”
How long a cognac is aged determines
its type: VS (very special) is aged for a min-
imum of two years; VSOP (very superior
old pale), a minimum of four years; and XO
(extra old) is aged for at least 10 years
(changed from the previous requirement of
six years in 2016). The older the cognac is,
the more complex the flavors become.
Kirkland Signature Cognac XO,
released this past November, is aged
between 12 and 21 years. This full-bodied
liquor has aromas of oak, vanilla and dried
fruit, in addition to honey, chocolate and
almond, that lead up to a smooth finish.
It’s standard practice, especially for an
older cognac like an XO, to be served neat.
But for those who prefer to mix their liquor,
it pairs well with notes of citrus, as in the
classic Beautiful cocktail (a combination of
cognac and orange liqueur), or even with
cola, Romar says.
This fine liquor boasts great flavor at a
