SKINNY THAI LETTUCE BOWLS
Wholesome Garden by Taylor Farms
1 tablespoon olive or sesame oil
1 pound lean ground chicken
2 garlic cloves, minced
½ onion, chopped
¼ cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon freshly grated ginger
1 teaspoon Sriracha, or to taste
1 (8-ounce) can water chestnuts,
drained and diced
3 green onions, thinly sliced
Kosher salt and black pepper, to taste
5 cups Wholesome Garden Organic Spring Mix
Heat oil in a saucepan over medium-high heat.
Add chicken and cook until browned, crumbling
chicken as it cooks. Drain excess fat.
Stir in garlic, onion, hoisin, soy, vinegar, ginger
and Sriracha. Cook until onions are translucent,
about 1-2 minutes. Add chestnuts and green
onions, cooking 1-2 minutes more. Season to
taste with salt and pepper. Add 1-2 cups of
Spring Mix to each bowl. Spoon seasoned
chicken over greens. Makes 2-3 servings.
