LOOKING FOR A healthy
plant-based protein to add
to your meals? Look no further than Kirkland
Signature™ Organic Quinoa. The product
may be new to Costco’s Kirkland Signature
lineup, but it’s an ancient staple in South
American culture dating back to the Inca
Empire. Quinoa (pronounced KEEN-wah) is
actually a seed, but it’s treated like a grain.
Quinoa has been the darling of health
buffs in recent years as a high-protein alternative to grains such as rice. Each serving of
Kirkland Signature Organic Quinoa contains 6 grams of protein and also trace minerals, such as calcium and iron.
As the seeds are boiled, they fluff up
and absorb liquid. Quinoa can be cooked
in water, broth or any kind of milk. Quinoa’s
versatility lends itself to sweet and savory
preparations, but it’s commonly paired
with grilled salmon or chicken, or mixed
with roasted vegetables. Some brands
require rinsing the seeds before preparing,
but Kirkland Signature Organic Quinoa is
pre-rinsed.
Since quinoa is a commodity item,
buyer Kristen Hayes, who oversees Costco’s
quinoa program, says, “Costco places a lot of
importance on sourcing it correctly to make
sure the farmer receives a fair price.”
Kirkland Signature quinoa is primarily
grown and harvested according to U.S.
Department of Agriculture organic standards, by small farmers in Bolivia and Peru,
the world’s top quinoa-producing countries.
“When we say we’re working with small
farmers, each [farmer] is typically working
between 5 to 12 acres of land. But it gives
them a chance to compete in a much larger
market,” Hayes says.
