CLEMENTINE QUINOA SALAD
Mouton Citrus, Seald Sweet & Summer Citrus

1 cup quinoa
1 cup water
1 cup freshly squeezed orange juice
1 tablespoon sugar
1 orange or 2 clementines
1 tablespoon butter
¾ cup fresh or thawed frozen corn kernels
1 cup canned black beans, rinsed and drained
Chopped cilantro, to taste
4 ounces goat cheese, crumbled
In a colander, rinse quinoa, then drain and transfer to a
pot. Add water, orange juice and sugar. Bring to a boil.
Cover, reduce heat to medium low and simmer until
liquid is absorbed, 15 to 20 minutes. Remove from heat
for 5 minutes; uncover and ;u; with a fork.
Zest orange or clementines. Set zest aside. Peel zested
fruit and section. Set fruit aside.
Melt butter in a saucepan over medium heat. Add corn
and sauté until golden. Transfer corn from saucepan into a
large bowl and stir in half of reserved zest.
Gently add cooked quinoa to the bowl of corn. Stir in beans,
oranges, cilantro and goat cheese. Garnish with remaining
zest. Serve immediately. Makes 4 servings.
