INGREDIENTS
4 portions Kirkland Signature™
Sockeye Salmon, thawed
Salt and pepper
4 sheets Kirkland Signature
Parchment Paper, approx. 18 inches in length
1 leek stalk, cut in ½ moons
1 fennel bulb, sliced thin
1 lemon, sliced thin
2 sweet potatoes (or yams), sliced thin
½ cup sliced green onions
1 tablespoon olive oil
METHOD
Preheat oven to 350 F.
Rinse salmon fillets in cold water, pat dry and season with salt and pepper.
Fold a piece of parchment paper in half, crosswise and center a fat pinch
of leeks on one side of the paper. Top the leeks with a pinch of fennel, then
2 lemon slices.
Shingle the sweet potatoes (or yams, or both) around the leek, fennel, lemon pile.
Place the salmon fillet in the center, then a fat pinch of green onion over the salmon.
Season the potatoes with salt and pepper and drizzle it all with olive oil.
Fold the parchment over the salmon, then fold the edges over several times all
around the edges to seal the salmon in a parchment envelope.
Place the sealed envelope onto a baking sheet, brushing or spraying the top with
olive oil. Repeat for remaining portions.
Place the packets in your preheated oven and bake for 15 minutes.
To serve, place a packet onto a plate and carefully cut open and peel back the parchment.
BE CAREFUL OF THE HOT STEAM AND REMOVE THE LEMON SLICES.
