THERE’S SOMETHING about the holidays that makes people nostalgic for certain sights, sounds and flavors. Traditional
holiday desserts, which are relegated to
only a few short weeks, can transport you
to joyful celebrations of past Christmases—
and all it takes is one bite.
“Fruitcakes may be the butt of holiday
jokes, but we’ve been producing them for
more than 29 years in-house, and the
amount continues to increase year after
year,” says David Richman, assistant gen-
eral merchandise manager of the Costco
bakery. “We’ve changed that impression of
our fruitcakes with the amount of quality
ingredients we use, and then we offer them
at a value for our members.”
Kirkland SignatureTM Traditional
Fruitcake is densely packed with pecans,
walnuts, Grade A pineapple and cherries
grown in Michigan. The brined fruit is
sweetened with sugar instead of high-fruc-
tose corn syrup. It takes 12 weeks to pro-
cess the green and red cherries to ensure
the best quality; if the process is rushed,
the flavor of the cherries will be compro-
mised, the fruit will wrinkle and the color
will dull, Richman says. Each fruitcake is
finished with an apricot glaze.
“The comment we get the most is that
it has more fruit and nuts than cake, com-
pared with the competition,” Richman says.
“Best of all, it comes in giftable packaging.
We designed it and merchandised it as a
gift-giving item.”
