STEELHEAD WITH GARLIC BREADCRUMBS
AND DIJON CREAM SAUCE

1 skin-on Steelhead fillet, 1-3 pounds
2 tablespoons olive oil
1 cup Panko bread crumbs
2 tablespoons butter
4 cloves garlic, minced
1 shallot, peeled and finely diced
¼ cup dry white wine
¾ cup canned low-fat evaporated milk
2 tablespoons Dijon mustard
1 tablespoon dried sage
Salt and pepper to taste
Season Steelhead with salt and pepper. In a large skillet over
medium high heat, add olive oil. Place Steelhead in pan, skin side
down. Cook about 6 minutes, or until skin is crispy.
Flip and continue to cook 2-3 minutes until golden on the skinless side.
While Steelhead is cooking, prepare the breadcrumbs. Melt 1 tablespoon
butter in a small pan over medium heat. Add ¾ of the minced garlic and
cook for one minute. Stir in breadcrumbs and cook until golden. Set aside.
Remove Steelhead from pan and tent with foil to keep warm. In the
same pan melt the remaining butter until foaming. Add shallot, and
remaining garlic. Stir to combine and slowly add wine. Cook 3 minutes
until mixture begins to bubble and reduce, then whisk in Dijon and milk.
Reduce heat to low and continue whisking until sauce thickens. Add
sage, and season to taste with salt and pepper. Serve Steelhead drizzled
with sauce and topped with garlic breadcrumbs. Makes 4-6 servings.
PARMESAN HERB MEATBALLS
Kirkland Signature
1 pound Kirkland Signature organic ground beef
5 tablespoons finely chopped onion
1 clove garlic, peeled and minced
1 egg
1 teaspoon dried oregano
½ teaspoon dried basil
2 ounces parmesan cheese, grated
¼ cup chopped parsley
Salt and pepper to taste
Heat oven to 325°F. In a large bowl, mix beef
with onion, garlic, egg, oregano, basil, parmesan and parsley. Season to taste with salt
and pepper. Gently shape mixture into 12 balls
of equal size. Place on cooking rack over a
broiling pan.
Bake meatballs 15-20 minutes. Meatballs are
done when an instant read digital thermometer
indicates 160°F. Remove from oven. Cool slightly.
Serve as is, or top with additional grated cheese
or sauce, if desired. Makes 4 servings.
