SHRIMP FETTUCINE

8 ounces uncooked fettuccine
16 ounces Seamazz® Easy Peel Shrimp
2 tablespoons butter
1 tablespoon extra-virgin olive oil
½ teaspoon salt
¼ teaspoon freshly ground black pepper
6 ounces fresh baby spinach
2 garlic cloves, peeled and thinly sliced
1 ¼ ounces parmesan cheese, shaved
Bring a large pot of lightly salted water to a boil. Add pasta
and cook for 8-10 minutes or follow package directions.
Peel shells from shrimp and set shrimp aside. In a large skillet
over medium heat, melt butter and oil for approximately
1 minute. Increase heat to medium-high. Add peeled
shrimp, salt, and pepper to pan. Cook for 3-5 minutes,
stirring occasionally, or until shrimp meat turns opaque.
Add cooked, drained pasta, spinach, and garlic to pan. Cook for
1 minute or until spinach wilts. Sprinkle with shaved
parmesan cheese. Serve immediately. Makes 4 servings.
