CLASSIC ITALIAN SAUSAGE SANDWICH
4 tablespoons olive oil
2 green bell peppers, stemmed, seeded and sliced into ½-inch strips
2 red bell peppers, stemmed, seeded and sliced into ½-inch strips
2 large onions, peeled, cut in half and each half sliced into ½-inch strips
4 cloves garlic, peeled and minced
10 Tarantino mild Italian sausage links
10 6-inch French or Italian sandwich rolls
Marinara sauce, optional
Grated Parmesan cheese, optional
Preheat grill to 325 F. Place a 10- or 12-inch skillet (cast iron recommended) on
preheated grill. Add oil, peppers, onions and garlic to skillet. Sauté vegetables until
softened and edges are dark. Move pan away from direct heat and keep warm.
Place sausages on grill, turning occasionally, without piercing, until thoroughly
cooked, to 165 F as measured with an instant-read thermometer. Remove sausage
links from grill and let rest for 2-3 minutes. Place each sausage on a roll and top
with sautéed vegetables. Add marinara sauce and Parmesan cheese, if desired.
