MEMBERS MAY BE surprised to find
out that one of the main ingredients in
Kirkland Signature™ Baguettes is time,
and lots of it.
“What sets these baguettes apart is
the length of time that has gone into
developing them as well as the length of
time that goes into baking them as we
replicate traditional old-world baking
techniques,” says Dave Archilla, Costco
bakery buyer.
Kirkland Signature Baguettes have a
nutty aroma and flavor, a crunchy
hearth-baked crust and a soft, honeycomb center, all attributes of a really
good baguette. That type of flavor and
texture is created through a long fermentation, allowing the dough to rest at
room temperature for six hours and
using a blend of levains (a mixture of
flour, water and natural leavening
agents) instead of commercial yeast.
“The Kirkland Signature Baguette
has the flavor you can really only get
using natural starters, a beautiful porous
interior with a crispy crust and pointed
tips that give it an artisanal appearance,” Archilla says.
The Kirkland Signature Baguette
was originally developed as a signature
item for Costco’s from-scratch bread
program. The formula was so well
received that the decision was made to
align with a manufacturer to emulate
the in-house process, allowing the
baguette to be sold in Costco warehouses from coast to coast.
