APPLE PIE FILLING OR TOPPING

;⁄; cup sugar
2 tablespoons butter
1½ teaspoons cinnamon
5 Eastern apples, peeled,
cored and sliced
5 tablespoons water, divided
1½ tablespoons cornstarch
In a medium saucepan over medium heat, add sugar,
butter and cinnamon. Stir in apples. Add 3 tablespoons
water. Cover and cook 8-9 minutes, stirring occasionally,
until apples are softened.
Whisk together cornstarch with remaining
2 tablespoons water. Stir into apple
mixture and continue to cook
1-2 minutes more, until mixture
has thickened. Use as pie ;lling,
over ice cream, or enjoy on
its own. Makes 6-8 servings.
TROPICAL OVERNIGHT OATMEAL
Del Monte Fresh Produce
Breakfast is a snap with a quick step the
night before. Mix oats with yogurt and
refrigerate overnight. Add bananas and
pineapple chunks in the morning.
;⁄; cup old fashioned oats, uncooked
;⁄; cup nonfat milk
;⁄;;cup nonfat Greek yogurt
;⁄; teaspoon ground allspice
1 cup fresh Del Monte® Gold Extra Sweet
pineapple chunks
1 medium Del Monte® banana, sliced
2 tablespoons sliced almonds
Divide oats, milk, yogurt and allspice between
2 bowls or glass jars. Stir well. Cover and
refrigerate overnight. Just before serving,
add pineapple, banana and almonds.
Makes 2 servings.
