MUSSELS

1 pound mussels, scrubbed and
debearded
2 tablespoons butter
Place mussels in a large microwaveable
bowl. Cover tightly with plastic wrap or
use a plate as a lid.
Microwave on full power for 4 minutes.
Remove from microwave oven and
allow to sit covered. Place butter in
small microwaveable dish. Microwave
20 seconds or just until butter is melted.
Remove cover from mussels. Serve with
melted butter and crusty bread.
Makes 2 servings.
CLAMS PIRI PIRI

PIRI PIRI SAUCE
12 red jalapeños, halved and seeded
10 garlic cloves
1 cup extra-virgin olive oil, divided
½ cup red wine vinegar
1 teaspoon kosher salt
2 teaspoons oregano
1 teaspoon cayenne
1 tablespoon smoked paprika
Preheat oven to 375 F. Place jalapeños and garlic in a small bowl.
Drizzle with 2 teaspoons oil and toss to coat. Transfer to baking
sheet and roast for 15 minutes.
Place remaining oil and ingredients in a medium saucepan.
Stir in roasted peppers and garlic. Simmer 10 minutes, then cool.
Transfer to a blender and puree until smooth. Store refrigerated.
STEAMED CLAMS
¾ cup Piri Piri sauce
2 tablespoons butter
2 pounds littleneck clams, washed well
¼ cup parsley, chopped
In a large, heavy-bottomed pot with a tight-;tting lid, bring sauce
and butter to a boil over medium-high heat. Add clams and cook
4-5 minutes, until shells are open. Transfer to serving bowl; sprinkle
with parsley. Serve with crusty baguette. Makes 4 servings.
