GRILLED BEEF TENDERLOIN WITH
CLEMENTINES AND CELERY CHIMICHURRI

7 Dandy® clementines, divided
1 cup chopped Dandy celery sticks
;⁄; cup olive oil
¼ cup each chopped parsley and basil
2 tablespoons white wine vinegar
2 garlic cloves
1 tablespoon capers, drained
1½ teaspoons each salt and pepper, divided
¼ teaspoon red chili ;akes
2 pounds beef tenderloin roast
Juice 4 clementines. In small food processor, pulse
juice with celery, oil, parsley, basil, vinegar, garlic,
capers, half the salt and pepper, and chili ;akes.
Ingredients should be pureed until almost smooth.
Halve remaining clementines. Season beef with
remaining salt and pepper.
Preheat grill to medium-high; grease grate. Grill tenderloin,
turning once, 8-10 minutes. Cook, covered, over indirect heat
for 15-20 minutes or until 140 F for medium. Remove from
grill; cover with foil to rest. Grill the remaining clementines.
Slice tenderloin into ½-inch-thick medallions; serve with
chimichurri and grilled clementines. Makes 6 servings.
