hen Gina Homolka set out to
lighten her family’s meals in
;;;;, bland diet food wasn’t
an option. The Long Island,
New York, Costco member knew her
fiancé and her ;-year-old daughter
wouldn’t go for cardboard-tasting cui-
sine. So she tried to make their favorite
family recipes lighter, using whole-food
ingredients and convenient cooking
techniques. “I grew up eating everything
my parents cooked from scratch,” she
says. “For me it’s about using real food
and finding ways to make it work.”
The pounds fell off, and Homolka’s
recipe collection grew. She housed her
recipes on a blog called Skinnytaste,
accompanied by beautiful photographs
she took using skills honed in her career
as a digital photo retoucher. Though the
blog started as a hobby, readers flocked
to the delicious recipes—such as avo-
cado fries and spiralized veggie gratins—
at skinnytaste.com. The trimmed-down
