TACO BITES WITH PERUVIAN GREEN SAUCE

SAUCE
1 bunch cilantro (about 2 cups), washed and trimmed
½ cup mayonnaise
½ cup cotija cheese
20 fresh mint leaves
2 Tbsp fresh lime juice
1 garlic clove
1 jalapeño pepper, quartered and seeded
FILLING
11⁄ 3 lb Kirkland Signature™ organic ground beef
1 ( 1½-oz) package taco seasoning
30 to 36 mini phyllo shells
½ cup shredded cheddar cheese
1 tomato, finely chopped
Prepare the sauce: Place all ingredients in a food processor
and blend well until combined. Chill.
Prepare the beef and phyllo: Brown ground beef, drain and stir
in taco seasoning. Set aside. Heat phyllo shells according to
package directions.
Assemble the taco bites: Place 2 tsp meat in each shell and
top with sauce, cheese and tomato. Makes 30 servings.
