Quick and Easy Pasta Toss
2 tablespoons olive oil
1/2 pound Italian sausage, cut in 1-inch pieces
1/2 cup chopped red onion
1 cup Eat Smart Garden Vegetables carrots, cut in half lengthwise
1 cup Eat Smart Garden Vegetables snap peas
1 cup Eat Smart Garden Vegetables broccoli, cut in small florets
2 14 1/2-ounce cans diced tomatoes with basil, garlic and oregano
8 ounces penne pasta, prepared according to package directions
1/2 cup 1/2-inch cubes mozzarella cheese
1/3 cup pitted kalamata olives
1/4 cup shredded Parmesan cheese
1. Heat oil in a large frying pan over high heat. Add sausage, onion and carrots;
cook, stirring often, for 5 minutes.
2. Lower heat; add snap peas and broccoli. Cook until crisp-tender, making
sure vegetables do not lose their color. Add tomatoes, mixing well, and cook
just until warm.
3. Place hot pasta in a large bowl. Pour sauce over pasta, then add mozzarella
and olives; toss to coat.
4. Serve immediately or let cool to room temperature. Just before serving,
sprinkle with Parmesan cheese. Makes 4 servings.
Tip: This is an easy, quick dinner to put together. Eliminate the cheese and
sausage if you’d prefer a lighter dish.
