Upside-Down Peach Cioccolati Cake
2 tablespoons butter, melted 1 4.6-ounce box French vanilla
1/4 cup brown sugar instant pudding
3-4 fresh, firm peaches, 2 eggs
thinly sliced 1/4 cup real sour cream
2 Nonni’s* Cioccolati Biscotti, 1/2 cup canned sweetened
chopped in large chunks, condensed milk
plus 1 cup ground Nonni’s 1/2 teaspoon vanilla extract
Cioccolati Biscotti (use food
processor or blender)
1. Preheat oven to 350°F. Mix butter and brown sugar; spread in a
greased 6-inch round baking pan.
2. Arrange peaches on the butter/sugar mixture. Sprinkle biscotti
chunks over peaches.
3. On medium-low speed, blend pudding, eggs, sour cream, condensed
milk, vanilla and ground biscotti until thoroughly mixed (1-2 minutes).
Batter may be gritty. Pour over the crumbled biscotti. Batter may reach
the top of the pan.
4. Bake, attentively, for 40-50 minutes, or until center is golden brown.
Cake may rise above the top of the pan during baking. Let cool, then
invert pan onto a serving dish. Makes 4-6 servings.
Tip: Recipe can be doubled, using a 9-by-13-inch pan or a 12-inch
round pan.

Grandma Mary’s Apple Cake
1 1/2 cups sugar
1/2 cup vegetable oil
2 large eggs
2 cups unbleached white flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
3 cups peeled, sliced Washington apples (any combination of
L&M Braeburn, Fuji, Gala or Red Delicious)
1 cup chopped pecans or walnuts
1. Preheat oven to 350°F.
2. Combine all ingredients in a large bowl. Mix with a wooden spoon until
combined; dough will be very stiff. Spread in a buttered 9-by-13-inch pan.
3. Bake for 35 minutes, or until a toothpick inserted in the center comes
out clean. This is excellent for picnics; it keeps well and stays moist.
Makes 12 servings.
