Salmon Fillets à la Blanc
1 pound fresh Kirkland Signature salmon fillets
1 cup diced tomatoes
1/4 cup Cabernet Sauvignon Blanc or other dry white wine
3/4 teaspoon dried basil
1/4 cup shredded Swiss cheese
1. Preheat oven to 350°F.
2. Cover a baking pan with aluminum foil.
3. Place salmon fillets in the pan and sprinkle with salt and pepper to taste.
Cover with diced tomatoes. Pour wine over salmon. Sprinkle evenly with basil.
4. Bake for 15 minutes. Remove pan from the oven and quickly sprinkle
cheese over salmon. Bake for an additional 3-5 minutes, or until cheese is
melted and salmon is cooked to taste. Makes 2-3 servings.
